This is the best non-thin-crust low-carb pizza I’ve made yet (without wheat). I think it can be further adapted to mimic a chicago-style deep dish (like Giordano’s or Gino’s East), but I haven’t tried it yet.
Cauliflower-based recipes can make a great thin-crust low-carb pizza, but I haven’t had much luck getting a chewy, bready result from that recipe.
The fact that this recipe is about 80 time faster than the cauliflower recipe is an additional bonus.
